Not any one taco style, these are a mashup of some of my favorite things: warm corn tortillas, lightly marinated cabbage, sweet juicy peppers, warm velvety sweet potatoes.
Fresh spring asparagus roasted with wintery potatoes, cabbage, and sausage, all ready to be dipped in cool, herb-flecked yogurt: it’s a meal for the ever-changing early spring.
This is, essentially, a deconstructed cabbage roll: same great flavor, way easier prep, and done in an hour.
